Ingredients

  • 2.5 cups of all purpose flour + 2 tbsp
  • Approximately 1 cup water divided
  • 1/2 tsp salt
  • 1 tbsp sugar + 1/2 tbsp for yeast
  • 2 tbsp. oil
  • 1 egg
  • 2 tbsp. milk powder
  • 1/2 tsp. baking powder
  • 1 tbsp. yeast I used fast acting yeast, you can use instant or active dried

Instructions

  • Dissolve 1/2 tbsp sugar in 1/2 cup of warm water. Add yeast, whisk for few seconds, and leave it for 10 minutes.( If your yeast doesn't bubble up after 10-15 minutes, something is wrong with your yeast, you'll have to make the yeast mixture again.)
  • Add flour, 1 tbsp sugar, salt, baking powder, milk powder to a big bowl and whisk. Now add egg, oil and yeast mixture and mix. Add remaining 1/2 cup of water GRADUALLY as needed and knead for 15 minutes. Make a round ball of dough and place it in a lightly greased big bowl and brush the top with oil too. Cover with cling wrap and let rise till doubled in size (2 hours or so).
  • Punch down the dough and divide into 4 pieces and roll them out to make 4 personal size fatayers. Put zaater or cheese on top. Bake in a preheated oven for 10-15 at 220c. (I also used the broiler option to get cheese to golden a bit on top)
  • Cheese Mixture I used:
    Cheese spread (puck)
    Mozerella
    Cheddar
    (just mix them up and flavor if you want. Mixture shouldn't be too wet, see the topping in my story)
